Mojitos are truly the under dogs of south of the border cocktails. Margaritas are always the main star and mojitos always take the backseat. When Gabe and I started dating he told me about his deep obsession with Mojitos. He prefers them over margaritas and tends to order them when we are out during the summer.
In fact, there is a restaurant we love in Mystic that we race to as often as we can to sit outside by the water and enjoy their mint mojitos.
When the pandemic hit, we began making more and more simple to make cocktails at home. So, of course, we began making mojitos at home. We play around with numerous different flavors, but one of our absolute favorites is this coconut mojito.
A refreshing coconut mojito made with fresh raspberries and muddled mint then topped with sugary dark rum... what more could you want?
So, let's run to the bar and make some sparkling lemon raspberry coconut mojitos.
What You Need For This Sparkling Mojito
To make this coconut lemon mojito, you will need a few simple ingredients.
From the Bar: Dark or Light Rum. I used Flora De Cana, but any flavor will work well, so long as it is not spiced rum! Do not use spiced rum for this cocktail!
From the Fridge: Fresh Lemon Juice or Juice from ½ Lemon (Approx 1 tbsp); 2 Tbsp of Fresh Raspberries; Mint Leaves; and Sparkling Coconut Water (see my subs for this).
Substitutions and Tips
Sparkling Coconut Water- If you do not have sparkling coconut water, use ½ coconut water and ½ sparkling plain or lemon water in place of the sparkling coconut water. Should you not like the coconut taste, omit the coconut water entirely and use sparkling water in its place.
Rum- You can use dark rum, like I did, or you may use white rum. You may also used flavor rum but make sure the flavor mixes well with coconut, lemon and raspberry. Do not use spiced rum! It will not taste good.
Muddler- If you do not have a muddler, use the back of a wooden spoon, as I did in this recipe. You will want to muddle until the raspberries have a jam like look to them.
How to Make This Refreshing Mojito
This sparkling lemon raspberry mojito is extremely easy to make. Follow these four simple steps, and you will have a refreshing cocktail in less than 5 minutes.
First, you must muddle your mint and raspberry together. Then, add in your ice. Pour your lemon juice and rum on top of the ice. Next, fill your glass to the rim with sparkling water and stir. That's it. It is that simple.
How To Serve This Raspberry Mojito
I serve this mojito on the rocks in a shorter glass. This ensures that it is extra boozy! If you want a lighter drink, feel free to use a taller, high ball glass, which will allow you to add more sparkling coconut water. I also place a straw in mine to make it easier to sip out of!
You can also pop some fresh mint on top or fresh fruit for a garnish, although you most likely do not need it.
The drink is best served immediately, and it does not hold well when being prepared ahead of time. If you need to make it for a crowd, I recommend making the recipe at once, but increasing the amount of ingredients by the amount of people, as this recipe is for one.

Yes! Add some extra ice cubes and blend it up. Make sure you blend thoroughly so you do not end up with chunks of mint.
Yes, you can use pineapple, blueberries or basically any of fruit that is soft enough to muddle.
Yes, you may add a tsp of sugar and muddle it with the mint and raspberries.
THE BEST SPARKLING LEMON RASPBERRY MOJITO
- 2 tbsp fresh raspberries
- Juice from ½ lemon approx. 1 tbsp
- 4 fresh mint leaves
- 1 oz Rum see tips
- Sparkling coconut water see tips
- Place raspberries and mint into a glass and muddle for 15 seconds, or until they are to the desired consistency. I muddle until all of my raspberries are broken down into pulp / jam like texture.
- Fill your glass to the rim with ice.
- Add in rum and lemon juice then stir.
- Fill glass to the top with sparkling coconut water (see tips) and stir again. Cheers.
