Instructions
Simple Syrup
Add water to a small sauce pan and heat until boiling.
Add sugar and rosemary then allow to simmer until the sugar is dissolved. This will take 45-90 seconds. To test whether the sugar is dissolved, spoon out a small portion of the liquid. If you still see sugar crystals, they have not dissolved yet and need to simmer longer.
Once the sugar has dissolved, remove from heat and allow to steep for 10 minutes.
Once it has steeped, strain into a heat resistant jar or container.
Cocktail
Add lime juice, grapefruit juice, vodka, and simple syrup in a highball glass and mix.
Add ice (approx ½ cup) then fill to the brim with spiked seltzer (or regular seltzer) and mix again. Cheers!
Notes
Rosemary Simple Syrup. I recommend you make your own simple syrup. It is easy and can be done in 15 minutes and allows for the freshest flavor. You can also use a store bought rosemary simple syrup.
If you prefer not to use the simple syrup, you may garnish with rosemary to add a slight rosemary flavor + add .75 oz of your choice of liquid sweetener (optional).
Spiked Seltzer- This recipe calls for grapefruit spiked seltzer. I like White Claw, but any brand will work.
If you prefer to make this recipe with non alcoholic seltzer instead spiked seltzer, you may use a grapefruit flavored seltzer or plain.
