Just Egg French Toast (with cinnamon apple topping)

Enjoy Just Egg French Toast with homemade cinnamon apple compote and drizzled with sweet maple syrup. It's quick, easy, and perfect for vegan brunch or Saturday mornings. Have this vegan friendly version of the comfort classic on the table in less than 30 minutes.

Ingredients
  

French Toast

  • 6 pieces bread
  • ½ cup Just Egg
  • 1 tsp vanilla extract
  • 2 tsp maple syrup
  • ½ tsp cinnamon
  • ¼ cup almond milk
  • Your choice of cooking oil or butter

Apple Compote (optional)

  • 1 apple softer apples work best
  • ½ tbsp coconut oil
  • ½ tsp cinnamon
  • ½ tsp brown sugar

Instructions
 

French Toast

  • Add all ingredients, other than the bread, to a meduim size bowl (I find that casserole dishes work the best).
  • Whisk the mixture until all ingredients are combined.
  • Add one or two, depending on the size of your bowl, pieces of bread into the just egg mixture, letting it to sit for 30-60 seconds to enable it to soak up as much mixture as possible.
  • Using a skillet, heat your choice of cooking oil or butter (approx 1 tbsp) over medium to low heat.
  • Once the skillet is heated, place one (or two depending on the size of your skillet) piece of the bread covered in the Just Egg mixture directly onto the skillet.
  • Allow to cook for about 4 minutes then flip and repeat on the other side. The surface of the toast should look golden brown and a little crispy on each side
  • While the french toast is cooking in the skillet, add the next pieces of bread into the just egg mixture, allowing it to soak.
  • Once the french toast is done cooking on each side, remove it and place it onto a plate then cook the additional pieces (be sure to add extra butter or cooking oil to the pan between each piece to ensure none stick).
  • Top with maple syrup, whip cream + the delicious apple compote!

Apple Topping (optional)

  • Chop the apples into bite size pieces, about ½ inch.
  • Heat a medium sized skillet over medium heat. Once work, add in the coconut oil.
  • Once the coconut oil melts, add the chopped apple pieces and mix into the coconut oil to enable to be well coated.
  • Add in the brown sugar and cinnamon and saute for 8-10 minutes, until the apples are tender. You will need to mix them often. (please note, harder apples will take a little more time to become soft).
  • Once the apples are tender, and slightly brown in color due to the sugar and spices, top the Just Egg french toast with them! Enjoy!

Notes

Important Notes
Be sure to add cooking oil or vegan butter after cooking each piece of toast to ensure none stick.
 
If your cook top tends to run hotter (gas stove, for example), you may need to lower the heat once the skillet is warmed and cook the toast for less time on each side.
 
Just Egg is a vegan egg substitute. It is usually stored in the dairy section of grocery stores, near the eggs or other refrigerated dairy alternatives. 
 
Substitutions
Bread- You can use any bread you would like! I personally use GF bread or Sourdough bread. Please note, the thickness of the bread may affect the cooking time, so always keep a close eye on your french toast when it is cooking. 
Almond Milk- You may use any plant-based milk you would like, other than coconut milk, as it changes the flavor (unless you love coconut milk, then go ahead!).
Cinnamon- You may omit or use nutmeg or allspice.
 
Storage
You can also gently re-heat the french toast in a microwave until warm.
 
This recipe is best when consumed right away. If you do need to make this ahead of time, I suggest making the mixture only, as the french toast can get soggy when sitting for too long. Store the mixture in an air-tight container in the fridge for up to 3 days.
