Tangy Lemon Chickpea Smash

Ingredients
  

  • 1 can chickpeas drained;
  • 1 tbsp vegan mayo optional;
  • ½ avocado
  • 1 tsp lemon juice
  • 2 tbsp celery. diced
  • 3 cherry tomatoes sliced;
  • 2 tbsp cucumbers chopped;
  • jalapeno diced;
  • 2 tbsp red onion diced;
  • A pinch of garlic salt
  • A pinch of pepper
  • Hot sauce for a drizzle.

Instructions
 

  • In a large bowl, smash the chic peas so they are at least 75% smashed. Use a potato masher or a fork.
  • Next, add in the avocado and mash some more (it really gets your anger out!). Stir in the mayo. Fold in the additional ingredients so they are well combined.
  • Top on whatever you want in the moment. Enjoy!
