– Roma Tomatoes – Basil – Shallot – Garlic – Olive Oil – Vegetable Broth – Coconut Cream – Fresh Basil – Salt + Pepper

Roast your garlic, shallot, and roma tomatoes for 45 minutes at 425 degrees F.

Place roasted tomatoes, shallots and vegetable broth into a blender. Blend for approx 45 seconds, until the ingredients break down and become liquid.

Pour the mixture into a saucepan. Add in coconut cream, and gently heat for 3-4 minutes. Stir in basil, and salt & pepper and heat for 1 more minute.

Top with croutons, coconut cream, and fresh basil!
