These healthy gooey vegan protein brownies are a delicious, nutritious dessert. Naturally gluten free, refined sugar free and dairy free, these decadent, moist small batch brownies are packed with protein. Bananas– An overripe banana is the based of this recipe! A ripe banana will work just as well, just make sure you mash it well and add ½ tsp more of maple syrup to sweeten it.
Oat Flour- I used oats for this recipe instead of flour. While oat flour would work just as well – a money saving type is to put your whole oats into a food processor and pulse until it is fine. I also let some on the chunkier side for added texture – you choice!
Chia egg– You may use flax egg as well, or you may use a real egg if you are not vegan.
Coconut Oil- You may also use canola oil or butter.
Protein Powder- I used Livbody Cake Batter protein powder, but you may use any type you like! I would recommend using vanilla or chocolate, but do note that if you do use chocolate, it will be much more fudgey.
Maple Syrup- A natural sweetener, feel free to use honey instead if you are not vegan.
Cinnamon- If you do not have cinnamon, you may use allspice.
Cocoa Powder– Sorry, no subs for this!
Almond Milk – Any plant based milk will work. Use vanilla or original (sweetened or unsweetened!).
Dark Chocolate Chips – Optional to make them more fudgy!
