Gooey Vegan Protein Brownies

These healthy gooey vegan protein brownies are a delicious, nutritious dessert. Naturally gluten free, refined sugar free and dairy free, these decadent, moist small batch brownies are packed with protein. Enjoy your vegan dessert with some added protein in less than twenty minutes. *** Double the recipe for a normal sized batch!

  • 1 overripe banana mashed
  • 1 chia egg 1 tbsp chia seeds, 4 tbsp of water
  • 2 tbsp maple syrup
  • ¼ cup almond milk
  • 1 tsp coconut oil melted
  • ½ cup oat flour see notes below
  • 3 tbsp cocoa powder
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ cup protein powder
  • 2 tbsp dark chocolate chips optional


  • If you are using a food processor, place oats into it and pulse until the oats are 75% ground.
  • Preheat your oven to 350 degrees F and grease a a bread pan.
  • In a large mixing bowl, mash your banana.
  • Add all ingredients, other than dark chocolate chips, into the bowl and mix well.
  • Once well mixed, fold in dark chocolate chips. Your mixture will be thick and smooth.
  • Pour your mixture into your pan. You may need to gently pat the top.
  • Bake for 12-14 minutes. This brownie will not fully baked when you remove it, but it will firm up. Allow it to cool for 15-20 minutes.
  • Enjoy immediately or store in an air tight container in the fridge for up to 5 days.


Bananas– An overripe banana is the based of this recipe! A ripe banana will work just as well, just make sure you mash it well and add ½ tsp more of maple syrup to sweeten it.
Oat Flour- I used oats for this recipe instead of flour. While oat flour would work just as well – a money saving type is to put your whole oats into a food processor and pulse until it is fine. I also let some on the chunkier side for added texture – you choice!
Chia egg– You may use flax egg as well, or you may use a real egg if you are not vegan.
Coconut Oil- You may also use canola oil or butter.
Protein Powder- I used Livbody Cake Batter protein powder, but you may use any type you like! I would recommend using vanilla or chocolate, but do note that if you do use chocolate, it will be much more fudgey.
Maple Syrup- A natural sweetener, feel free to use honey instead if you are not vegan.
Cinnamon- If you do not have cinnamon, you may use allspice.
Cocoa Powder– Sorry, no subs for this!
Almond Milk – Any plant based milk will work. Use vanilla or original (sweetened or unsweetened!).
Dark Chocolate Chips – Optional to make them more fudgy!
