Refreshing Gin Mojito Recipe with Raspberries

This under five minute gin mojito recipe with fresh strawberries is a fun twist on a classic mojito recipe. This gin version uses fresh mint leaves, dry gin, juicy raspberries and lime wedges. Perfect for any gin lover, or someone who just loves summer cocktails!

Ingredients
  

  • 2 tbsp fresh raspberries
  • ½ lime sliced into wedges
  • 4-6 fresh mint leaves
  • 2 oz gin
  • ½ tsp sugar or simple syrup
  • .5 oz lemon juice optional
  • 12 oz club soda
  • Ice.

Instructions
 

  • Place raspberries, lime, sugar and mint into a glass and muddle using a cocktail muddler (see notes). To muddle, gently press down and twist the muddler at the same time about 6 to 7 times.
  • Add gin (and optional lemon juice) and stir.
  • Fill your highball glass to the rim with ice.
  • Fill glass to the top with club soda and stir again. Cheers. Option to add mint, lime or raspberry garnish.

Notes

Muddler– If you do not have a muddler, use the back of a wooden spoon.
If you prefer not to use sugar, you can omit it or use your favorite sugar alternative, such as monkfruit or agave.
