Ingredients

  • 1 cup strawberries*, cut in half or in fourths approx 6-7 strawberries
  • 1 cup granulated sugar
  • ¾ cup water
  • 1 tbsp lemon juice approx ⅓ of a lemon

Instructions

  • Cut the strawberries into halves or fourths.
  • Add the lemon juice, water, strawberries and sugar into a small to medium sauce pan. Heat over medium to low heat, stirring often until the sugar dissolves completely. Do not allow it to boil.
  • Once the sugar has dissolved, allow the mixture to steep for 10-15 minutes.
  • Strain the liquid mixture through a mesh strainer into a heat resistant container. You can throw out the strawberries or blend them to make a puree for your drink. This simple syrup will last up to ten days in an airtight container in a cool, dry place.

Notes

If using frozen strawberries -  Allow the strawberries to completely thaw them remove any excess water before using them. I usually place them in a strainer while they defrost then on top of a paper towel to absorb the water.

Store this syrup in an air tight container in a cool dry place for up to ten days. It can also be stored in the fridge if your kitchen or pantry run warm. Give it a good shake if you notice the sugar separating from the water at all. This is more likely to happen in the refrigerator.
