There are little things Gabe loves more than a cinnamon roll. So, turning his favorite dessert (or breakfast or just anytime) food into a cocktail was a no brainer. We love night-cap drinks in our house, especially during the winter seasons.
Taking a classic treat - a cinnamon bun - and transcending it into a cocktail was probably one of my better decisions this year. The creaminess of the cinnamon bun is showcased by the Bailey's and the sweet, yet spiciness, of the cinnamon swirl is provided by the easy to make cinnamon simple syrup.
And while this cocktail is sweet, it is not too sweet, and it does not overpower the entire cocktail. You know, I do not enjoy an overly sweet cocktail!
Dessert drinks are perfect for anytime of the year, but especially during the winter when you want something creamy to end your day with! And while most dessert drinks take some time to make, this one is extremely simple!
Let me show you how easy it is to make!
Ingredients for Cinnamon Bun Cocktail:
You only need six ingredients for this cocktail! Yes, only six! They are the following: Vodka (I used Steel Dust); Bailey's (I used their Alamade, which is vegan); Plant Based Milk (I used almond milk); Sugar; Cinnamon Sticks; and water.
Vodka - I used Steel Dust Vodka for this cocktail. It kicks this drink up a notch. If you want a lighter version, skip out of this. You may also swap it for dark rum to make it sweeter.
Bailey's- I used the vegan version of Baileys made from Almond Milk. You may use the regular version if you are not dairy free. You may also sub for rumchata if you want more cinnamon (Gabe sure did).
Plant Based Milk- I used vanilla almond milk, but just about any variety will work! You may use plain or vanilla. I do recommend using vanilla to make this taste more like a tradition cinnamon roll.
Cinnamon Sticks- This is to make the cinnamon simple syrup. You may also use pre-made cinnamon simple syrup, but it is so easy to make, I do not know why you would!
Sugar- I used sugar in the raw, but any granulated sugar will work. Brown sugar or any of that nature will not.
Water- To make the simple syrup!
How To Make This Cinnamon Roll Cocktail:
This cocktail is extremely simple to make! First, add your water, sugar and cinnamon sticks to a small sauce pan and heat to a boil. Then, allow it to simmer for 8-10 minutes.
Once it is done, remove the cinnamon sticks. You will only need 1 oz of this. Place any unused simple syrup in an air tight container and store in the fridge.
Pour into a glass! That is it.
You also have the option to rim the glass with cinnamon. You may do this by placing the rim of your glass on an orange or lemon in order to moisten it. A clean sponge will also work. Then, pour cinnamon into a shallow bowl and place the rim into the cinnamon.
Option to garnish with a cinnamon stick!
Tips for Storing this Cinnamon Bun Cocktail:
This cocktail is best served immediately. If you are short on time, I suggest making the simple syrup ahead of time to cut out 10 minutes.

Ingredients
Cinnamon Roll Cocktail
- 1 oz Vodka
- 3 oz Bailey’s Almande for Vegan
- 1 oz Cinnamon Simple Syrup
- 1 oz Almond Milk
- ½ cup of ice
Cinnamon Simple Syrup
- ¾ cup of sugar
- 1 ½ cup of water
- 3 cinnamon sticks
Instructions
Cinnamon Simple Syrup
- Place all ingredients in a small sauce pan and heat until boiling.
- Lower the temperature then allow to simmer for 8-10 minutes.
- Once done, carefully remove the cinnamon sticks. Place all un-used simple syrup in an air tight container and store in the fridge.
Cinnamon Roll Cocktail
- Place all ingredients into a shaker and shake vigorously. Pour into a cup with ice.
- Option to garnish with a cinnamon stick and to add a cinnamon rim (to add a cinnamon rim, moisten the rim of the glass and place it into a shallow bowl filled with cinnamon. Do so before pouring the drink into the glass).
