There is nothing I love more than a delicious dessert drink, especially in the winter. I have always been drawn to espresso martinis and peanut butter cocktails, but I knew I wanted to add my new favorite spread into the mix!
If you have never had Cookie Butter (Lotus Biscoff), you must try it to find out what the craze is about. The highly addictive spread has somewhat of a cult like following.
So, it was not question that I wanted to add it into a cocktail!

It tastes like everything you could possibly want in a dessert drink, plus more! The creamy cookie butter mixes well with the smooth baileys, and the warm spices and sugar add a nice little seasonal kick to it!
This Cookie Butter Cocktail (Lotus Biscoff Cocktail) is incredible easy to make. All you need is a microwave or stove top, something to mix it with and a glass to make this drink!

Ingredients and Substitutions For Cookie Butter Cocktail
This cookie butter cocktail (lotus biscoff cocktail) is made with simple ingredients. All you need is: Cookie Butter (or lotus biscoff spread); dark rum; vodka, Bailey's Alamande; Almond Milk; Allspice; Cinnamon; and Brown Sugae. I have provided substitutions for you as well.
Cookie Butter- I used Cookie Butter from Trader Joe's. You can use any type you would like. Of course, the UK Version of this Lotus Biscoff Spread.
Baileys- I used Bailey's Almande because it is vegan. If you do not have any issue with regular Baileys, you may use that in place of the vegan version.
Vodka- You cannot taste the vodka in this drink, but if vodka is not your friend, you may leave this ingredient out. It will make the cocktail not as strong though!
Dark Rum- Dark rum adds a nice flavor to this. I used Meyer's Dark Rum.
Brown Sugar- I have yet to try this drink with regular sugar, so I cannot provide any subs. Do include this ingredient, however, as it aids in amplifying the taste.
Cinnamon and Allspice- These two spices also amplify the taste to ensure it fully tastes like cookie butter. If you do not have one, sub the other in place of it (for example, use ½ tsp of cinnamon rather than ¼ tsp if you do not have allspice)
Almond Milk - Use a vanilla or plain plant based milk of any type. Youm ay also use regular milk if you are not vegan/restricting dairy.
How To Make This Cookie Butter Cocktail
This drink could not be any simpler to make! I have provided a video in the recipe card to demonstrate that.
First, melt your cookie butter on a stove top or microwave. Be careful, cookie butter (lotus biscoff) burns easily, so start slow. It only needs to be melted - not completely liquid (see video).
Add the cookie butter (lotus biscoff), as well as all the ingredients, into a shaker and shake.
You have an option of melting additional cookie butter (lotus biscoff) to add to the cup in which you are pouring the drink in. This is super simple - using a spoon - scoop up melted cookie butter then twirl it onto your empty glass cup to allow it to fall onto the sides on inside the cup.
Place ice into the cup and pour in your cookie butter drink (lotus biscoff drink) mixture. You may add a cinnamon stick garnish if you'd like!
Tips for Storing This Drink
This drink is best served immediately. If you do need to store this drink, I would only recommend storing it in the fridge - without ice- for 30 minutes. Shake well before pouring it into the cup.

Creamy Cookie Butter (Lotus Biscoff) Cocktail
- 2-3 tbsp cookie butter / lotus biscoff started with 2 and add to your taste
- 3 oz oBailey Almande
- ¾ oz vodka
- ¾ oz dark rum
- 3 ½ oz almond milk
- 1 tsp brown sugar
- ¼ tsp allspice
- ¼ tsp cinnamon
- Melt cookie butter in a microwave or stove top. Start slowly, as it burns easily.
- Pour melted cookie butter and all additional ingredients, other than the ice, into a shaker and shake well. If you do not have a shaker, whisk the mixture in a bowl or place all ingredients into a mason jar, tighten the lid and shake.
- Option to drizzle melted cookie butter into the glass to add drizzle look.
- Add ice to cup and pour mixture into glass. Cheers!
- Serve immediately. If you must store, store in the fridge for 30 minutes without ice. Shake well before pouring.
