DIET: Gluten Free, Low Lactose, Vegan, Vegetarian

Skip the Starbucks line and enjoy homemade Pumpkin Cold Foam this fall from the comfort of your own kitchen. It's dairy free and low in sugar, making it both healthier and vegan friendly. Pour it over cold brew and sprinkle with additional pumpkin spice for the best, creamy pick me up.

    Why You'll Love This Recipe

    • It's dairy free! If you order a cold brew with pumpkin cream cold foam at Starbucks, the pumpkin cream cold foam is made with cream, milk and skim milk. This is totally fine if you are vegetarian, but if you avoid dairy or are vegan, there's sadly no substitute to try in stores. You can also make my non-flavored dairy free cold foam.
    • Easy to make. Luckily it is super easy to learn how to make vegan friendly pumpkin cream at home with fresh pumpkin puree and pumpkin pie spice mix.
    • 5 different ways to make! Froth your pumpkin cold foam with a handheld frother, blender, food processor, standard whisk, or electric mixer! If you've made my Oat Milk Matcha Latte, you likely already have a handheld frother at home.

    Ingredient Notes and Substitutions

All ingredients to make pumpkin cold foam in individual bowls labeled
    • coconut milk - You must use canned coconut milk. Cartons of coconut milk that you can purchase from the grocery store shelves or refrigerated section are nowhere near as thick as canned coconut milk and will not work here. Canned coconut milk is an excellent dairy free substitution for dairy cream and will froth into a beautiful cold foam.
    • pumpkin puree - Pumpkin puree is going to give your pumpkin cold foam a fresh, authentic pumpkin flavor! If you have made fresh pumpkin puree from roasted pumpkins, that will also work in this recipe. Save the remaining pumpkin puree to make Pumpkin Protein Muffins, Vegan Pumpkin Brownies, or Creamy Vegan Pumpkin Sage Pasta. You could also make a Boozy Vegan Pumpkin Spice Latte for another pumpkin coffee treat.
    • maple syrup - A natural sweetener that perfectly sweetens the cold brew to taste. I like to start with ½ a teaspoon. Add additional ½ teaspoons until the cold foam is to your preferred sweetness. You can substitute with another liquid sweetener as needed.
    • pumpkin pie spice mix - I prefer to buy a pre-mixed spice at my grocery store, but if you can't find one near you, you can make your own pumpkin spice mix at home with cinnamon, nutmeg, allspice, ginger, and ground cloves.

    Step by Step Instructions

These step by step photos and instructions are showing how to make pumpkin cold foam with a frother. If you are using another method like a blender, food processor, electric mixer, or a handheld whisk, scroll down to the recipe card for the full instructions.

For best results, use a frother, whisk or electric mixer - these appliances are going to be able to whip the most air into the cream and make it as fluffy as possible.

The first two steps of making this cold foam. The first showing all ingredients in a glass and the second showcases them being frothed together
    1. Add all ingredients to a cup or bowl. Make sure to use the harder portion on top of the can of coconut milk. This portion of the coconut milk contains a majority of the fat and will allow you to whip the foam into a light and airy texture.

If your coconut milk is too warm, place the can in the refrigerator for an hour or so to harden the milk before frothing.
    2. Froth until light and airy. Depending on your handheld frother, this is going to take about 1 minute. Overtime you'll begin to see the coconut milk cream and become light and fluffy in texture, similar to whipped cream.
Final step on how to make the cold foam showing the cold foam on top of coffee in a glass
    1. Pour pumpkin cream over coffee. The classic drinks you can order at Starbucks and Dunkin Donuts are pumpkin cold foam served over cold brew coffee. You can serve yours over homemade cold brew or a regular iced coffee. Or to make it even more flavorful, try it over my Iced Oat Milk Latte!

    FAQs

Can pumpkin cold foam be made with almond milk?

I don't recommend it. In order to make a thick and creamy foam, you need to use a milk that is higher in fat and firm before creaming into cold foam. Almond milk is too watery and will be too firm to whip.

Is pumpkin cold foam gluten free?

Yes, this homemade pumpkin cream is gluten free. The Starbucks and Dunkin Donuts versions are also gluten free, too!

Does pumpkin cold foam have caffeine?

No, there is no coffee or caffeine of any kind in the pumpkin cream. If you are sensitive to caffeine, swap the cold brew it's served over for a decaf iced coffee.

    Expert Tips

    • Choose a good brand of coconut milk. Not all brands of coconut milk are made the same and it's especially important to choose a good brand when you're planning to whip it into cold foam because the truth is, some brands just don't whip up into a nice foam!

I recommend looking for Savoy, Whole Foods 365, or Native Forest's Classic Organic Coconut Milk. You could also look for Nature's Charm Coconut Whipping Cream - it's made specifically for whipping into dreamy creams but note that it does contain sugar. If using, skip the maple syrup to start.

Unfortunately Trader Joe's coconut milk isn't the best - it is more liquidy than other brands and doesn't whip up well.
    • Double check that the coconut milk is COLD before starting. To avoid any errors, store your coconut milk can in the refrigerate the night before using.
    • Adjust the vanilla and pumpkin spice to taste. If you want an extra spiced cold foam, feel free to increase the measurements of the vanilla and pumpkin. You could even add in some cinnamon for a warmer flavor!

    Notes

    Important Notes
    Coconut Milk
-You must use the more solidified portion of the full fat coconut milk from a can.
-If your coconut milk appear to be grainy at all, that is OK. Because it is made from coconut and water, it can separate. Simply froth it by itself before adding the additional ingredients.
-If your coconut milk is too hard on the top and the froth cannot whisk through it, use a blender or food processor to break it down.
    Ingredients
-You can make your own pumpkin pie spice. If you do not, however, have pumpkin pie spice, I recommend using a combination of nutmeg and cinnamon.
    Storage
-This cold foam is best served right away. You can refrigerate it for up to 2 hours, but you likely will need to froth it again, as the coconut milk with solidify.
    -I do not recommend freezing.
