INGREDIENT NOTES
- pumpkin puree - Pumpkin puree is going to give your simple syrup a fresh, authentic pumpkin flavor! I used canned pumpkin puree from Libby's, but any canned pumpkin puree will work. You can also make your own. Save the remaining pumpkin puree to make Pumpkin Protein Muffins, Vegan Pumpkin Brownies, or Creamy Vegan Pumpkin Sage Pasta. You could also make a dairy free pumpkin cold foam for a coffee treat!
- sugar - you cannot make simple syrup without granulated sugar. This recipe uses both cane sugar and brown sugar. If you are vegan, make sure to use organic sugar. Conventional sugars can be bleached with non-vegetarian ingredients. You may use a granulated sugar substitute, such as monkfruit.
- nutmeg - if you do not have nutmeg, you may have allspice in its place.
STEP BY STEP INSTRUCTIONS
- Place all ingredients into a small to medium sauce pan and heat over medium to low heat, stirring often. The mixture will be clumpy and the puree may be hard to completely mix in with the other ingredients - that is ok.
- Bring to a simmer. Watch the mixture closely and continue to stir while the mixture heats up to a simmer.
- Once the sugars have dissolved, remove from heat. The sugars will dissolve into the water, and the pumpkin puree will warm, causing it to become more liquid in texture.
- Allow the mixture to sit for 15 minutes.
- Strain the mixture into a container. This will remove any thick chunks of the pumpkin puree and leave you with just the liquid of the simple syrup.
- Store in an air tight container in the fridge. This will keep for up to five days in the fridge! I prefer using a mason jar, so I can seal it well, but any container works.

Expert Tips
- Use a fine mesh strainer. This will ensure that all the pumpkin puree chunks or any thick parts will be removed. This will allow your syrup to be smooth, with no debris.
- Do not let the mixture simmer for too long. Once the sugars are dissolved, be sure to immediately take it off the burner. If it is left too long, the mixture can become extremely strong, and could become extremely thick.
- Adjust to your taste buds. If you prefer more a spicier syrup, add ½ tsp more of nutmeg and ½ tsp more of cinnamon. This will increase the intensity.
- Always refrigerate. Because this recipe uses fresh pumpkin puree, always refrigerate it in an airtight container to keep is fresh.

Ingredients
- ½ cup pumpkin puree
- ¾ cup granulated sugar
- 2 tbsp brown sugar
- ½ tsp cinnamon see notes
- ½ tsp nutmeg see notes
- 1 cup water
Instructions
- Place a small to medium size sauce pan over medium low heat, and place all ingredients into the sauce pan.
- Mix the ingredients and bring to a simmer.
- Once all the sugars have dissolved, remove from heat and allow to sit for 5 minutes.
- Strain the mixture over a container to remove any chunks of pumpkin puree left over.
- Store in an air tight container and place in the refrigerator for up to 5 days.
Notes
- If you prefer a stronger fall spice flavor, increase the cinnamon and nutmeg to 1 tsp each.
- You can swap granulated sugar for a sugar alternative, such as monk fruit. Be sure it is granulated though.
- I used Libby's brand for the pumpkin puree, but any pumpkin puree will work for this recipe.
- If you do not have nutmeg, allspice will work well in its place.
- If you are using a small strainer, you may need to strain the mixture in parts, dumping any pumpkin puree that is left on the top of the strainer.
